Linguine with Red Clam Sauce

Not only is this delicious pasta dish fast, but 3 oz. of chopped clams have barely 1 gram fat in its 70 calories. Serve with steamed sugar snap peas.
6 oz. linguine |
2 cloves garlic |
6 oz. chopped fresh or canned clams |
1 - large vine-ripened tomato, seeded and chopped |
2 tbsp. finely chopped Italian parsley |
- Preparation - Estimated cooking time: under 30 minutes -
- Cook linguine in a large saucepan of boiling salted water.
- While the linguine cooks, make the clam sauce. Heat oil in a small skillet over medium heat. Add garlic and cook 1 minute. Add clams and cook gently until they lose their transparency. Stir in tomato and cook to heat through. Add salt and a generous grinding of black pepper.
- Drain linguine. Toss with clam sauce and parsley.
